Pesto Garden HarvestPesto is a summer staple around here. I keep a block of Parmigiano-Reggiano on hand and usually have the rest of the ingredients growing in the garden. If you’re thinking about what to plant right now (it’s July), start with the basics.  A mixture of herbs (basil, parsley, oregano, thyme), kale and tomatoes are great to start with. These veggies aren’t too fussy or annoying to grow.
Pesto IngredientsI just finished trimming back the basil a week ago, so I had to sub some for kale. It’s a great alternative if you’re low on basil.

Ingredients:

  • Basil leaves
  • Kale leaves (no stem)
  • Oregano
  • Chives
  • Parsley
  • Parmigiano-Reggiano
  • Fresh lemon juice
  • Pine Nuts
  • Olive Oil
  • Salt + Pepper

I added everything to the food processor and that’s it.

*You can experiment and use different nuts. Including hazelnuts (Thanks for the tip Allie).
