Pesto is a summer staple around here. I keep a block of Parmigiano-Reggiano on hand and usually have the rest of the ingredients growing in the garden. If you’re thinking about what to plant right now (it’s July), start with the basics. A mixture of herbs (basil, parsley, oregano, thyme), kale and tomatoes are great to start with. These veggies aren’t too fussy or annoying to grow.
I just finished trimming back the basil a week ago, so I had to sub some for kale. It’s a great alternative if you’re low on basil.
Ingredients:
- Basil leaves
- Kale leaves (no stem)
- Oregano
- Chives
- Parsley
- Parmigiano-Reggiano
- Fresh lemon juice
- Pine Nuts
- Olive Oil
- Salt + Pepper
I added everything to the food processor and that’s it.
*You can experiment and use different nuts. Including hazelnuts (Thanks for the tip Allie).
