Pickled Garden Radish

I have a tiny urban garden that I’m pretty obsessed with. Because of the garden’s small size, I have to be pretty strategic with what I plant and grow. I try and grow things that are high-yield and fast-growing; radish happen to be one of those. I typically grow two types of radishes, French Breakfast and Easter Egg Blend. These are French Breakfast Radish grown from seed. I’m in Zone10b if you’re curious.

Since radishes grow under the soil it’s sometimes tricky to know when to harvest. It’s ok to move the soil from around the top and peek under the soil. If it looks like a radish and it’s full size, pull it up. If you leave them in the ground too long they’ll split in half or will become spongy.

Once harvested I pickled em’. And THEY WERE SO GOOD. We used them on tacos, veggies bowls and on top of salads.

Pickled Radish Ingredients: 

10 French Breakfast Radish

1/2 C Organic Apple Cider Vinegar

1/2 C Water

1/2 TBS Salt

1/4 Tsp Sugar

1 Garlic Cloves

1 Sage Leaf

1 inch stem: Thyme, Dill, Parsley

Tsp of Peppercorns

Dash of Red Chili Flakes (optional)

To Do: 

Thinly slice the radishes and add them to an empty glass jar or tupperware container. Add in and stir the rest of the ingredients.

My radish were tasty after they rested for 24hrs. BUT, they can be eaten within an hour.

 

I’ll be sowing more radish seeds this weekend.
