Lemon Chamomile Gin Fizz

So, I took a poll on Instagram a few weeks back and the results are above. I seriously thought the Margarita would win buuut, guess you guys like Gin.
This was a fun one to make. Once I got over the egg whites I was good to go. Ps: Don’t let it scare you. You can’t taste it, I promise. It just gives the drink a creamy, frothy texture.

Note: Pop your cocktail glass into the freezer before you start.

Ingredients: 

For the Chamomile Simple Syrup:

  • Fresh chamomile blooms (or you can make a strong tea with bags)
  • Sugar (I used turbinado sugar)
  • Water

 

I like to do a 1:1 ratio of sugar and water for simple syrup. I infused about 2 tablespoons of blooms in the sugar and water mixture. Left it to simmer for about an hour. If you don’t have that much time, take it off sooner. It is what is you know?

*Simple syrup will store in the fridge. But I try and only make what I need that day.

Ex: one cup of water = one cup of sugar or 1 TBS of water = 1 TBS sugar

For the Cocktail:

(Made 2 drinks)

  • 2 oz Good Gin ( I used this one)
  • Lemon Juice  – Half a lemon or so.
  • Chamomile Simple Syrup – up to you for how much
  • 1 egg (whites only!)
  • Soda Water
  • Garnish – blooms and lemon peel

I never really measure cocktails when I make them so I’ll do my best. But honestly you can’t mess it up. If you like sweet add more chamomile simple syrup, if you like things tart add more lemon, if you want it balanced ease up on the lemon and chamomile, etc etc. I’d say “experiment a little”, but really that’s just me saying, “sorry I didn’t really measure”. But yea, experiment a little.

How’d I make it?

In a shaker, add gin, lemon juice, egg whites and simple syrup to taste. The amount of the chamomile simple syrup will depend how sweet or dry you like your cocktails. I start with about 1/2 TBS and add more if I need to. I’m not a fan of sweet drinks so, I took it easy on the syrup.

Shake the hell out of the shaker! For like a minute, that’s what makes it creamy. When the minute was up, I added a few cubes of ice to cool it down, did a quick shake and poured. I strained the liquid with my cocktail strainer and boom done. If you have Chamomile blooms or a lemon peel for garnish, now’s the time to add it. Thinking about making the Margarita too. I’ll share it if it’s good.
